That’s why I’m excited to share with you today my recipe for ABC Muffins – a delightful blend of apple, banana, and carrot. These muffins are not only packed with vitamins and nutrients, but they are also perfect for moms who are trying the baby-led weaning approach. With their soft texture and irresistible taste, these ABC Muffins make a fantastic addition to your little one’s mealtime
Safety Tips for Baby-Led Weaning
As with any new eating experience, safety is a top priority. When preparing ABC Muffins or any other baby-led weaning recipes, keep the following tips in mind:
- Always supervise your baby during meals.
- Cut the food into appropriate sizes and shapes that are easy for your baby to grasp (download the Solid Starts app, its sooo helpful for this!)
- Introduce one food at a time to watch for any potential allergies or adverse reactions.
- Be cautious of choking hazards and avoid small, hard, or round foods until your baby is ready.
Now, let’s get to the recipe!
ABC Muffins
Ingredients
- 2 very ripe bananas, mashed
- 1/2 cup shredded apple (about 1 apple)
- 1/4 cup shredded carrot (about 1 small carrot)
- 3/4 cup milk of choice
- 1/4 cup melted butter, cooled
- 1 egg
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
Directions
- Preheat oven to 375
- Grease a muffin pan with nonstick spray or use paper liners
- Shred your carrot and apple
- Place the banana, apple, carrot, milk, butter, egg, and vanilla into a bowl. Stir together.
- Gently, but thoroughly, stir in the flour, oats, cinnamon, baking powder, baking soda, and salt.
- Divide batter among the prepared muffin pan, filling each cup to the edge.
- Bake for 16-20 minutes or until a cake tester inserted into the center comes out cleanly. (I do 17 minutes in my oven.)
- Let cool for a few minutes in the pan, then transfer to a wire rack to cool fully. Cut to serve to baby according to age and comfortability
- Store in airtight container for up to 7 days or individually wrap each one in tinfoil and place in a freezer safe bag and store in the freezer for up to 3 months (don’t forget to label it!)
